For example, when he saw he Touka for he first time again in Re he started crying. However, meeting Nishiki when he was Serpent, running into Touka at :Re, seeing Hinami at the auction, all these events started bringing certain feelings and former memories to his forefront but in bits and pieces. He knew he was a strong ghoul who went up against the CCG but that was it. In TG: Re its been established that Haise had a vague understanding of his past. Due to that he ended up with no memories of his past, and named himself, with Arima’s help, ‘Haise’. That breakdown caused him to be a blank slate as he ended up just locking the personality of Kaneki away. In TG: Re they showed Kaneki having a lengthy mental breakdown during his Cochlea imprisonment. Add the two brutal head injuries from his first fight with Arima, and all of it caused him to mentally snap.
